Beef Brisket


4 – 5 lbs Beef Brisket, well trimmed
1 ½ Teaspoons Salt

½ Cup Ketchup
2 Tablespoons Cider or White Vinegar
¼ Cup Wine
1 Tablespoon Worcestershire Sauce
1 Bay Leaf
¼ Teaspoon Pepper
¼ Teaspoon Celery Seed
½ Teaspoon Ground Mustard
1 Beef Bouillon Cube or 1 Teaspoon Beef Bouillon Granules
½ Cup Onion, finely chopped
1 Clove Garlic, minced


Spray the bottom of the roasting pan with cooking spray.

Trim the fat from the brisket, removing as much as you can. Rub salt on both sides of the meat then place the brisket into the roasting pan. Add about a ½ inch of water to the roaster.

Easy Taco Skillet


1 lb. Ground Beef
6 Flour Tortillas
1 Can Tomato Soup (10 3/4oz.)
½ Cup Salsa
½ Cup Warm Water
Pepper to taste
½ - 3/4 Cup Cheddar Cheese, grated
Sour Cream
Romaine Lettuce, chopped


Cut up or tear the flour tortillas into 1 inch pieces and set aside. Grate the desired amount of cheese and set it aside.

In a 10-inch skillet, brown the ground beef, chopping into small pieces. When the meat is well browned, drain off the fat and return the skillet to the burner.

Corned Beef Casserole


1 – 8oz. package of wide egg noodles, cooked and drained
1 - 12oz. can of Corned Beef
1 - 10 3/4oz. Can of Cream of Mushroom Soup (Healthy Request, 98% Fat Free)
1 - 10 3/4oz. Can of Cream of Chicken Soup (Healthy Request, 98% Fat Free)
1 Cup Milk
½ Cup Onion, finely chopped
¼ Cup Cheddar Cheese, grated
1/4 Cup (1/2 Stick) Butter or Margarine, melted
4-5 Slices of Bread, cubed


Preheat oven to 350°

Cook the egg noodles according to the package. While the noodles cook, cut the bread into cubes, chop the onion and grate the cheese. Melt the butter and set aside. Place the corned beef into a large bowl. Flake the corned beef with a fork. Add the onion, cream of mushroom soup, cream of chicken soup and 1 cup of milk to the corned beef and stir to combined. Add the cooked, drained egg noodles to the corned beef mixture and stir gently to coat.

Put the corned beef/noodle mixture into a 13” x 9” casserole dish. Top with the cheese then the bread cubes. Drizzle the melted butter over the breadcrumbs. Bake for 1 hour and serve.


I use Campbell’s Healthy Request Cream of Mushroom and Cream of Chicken soup to keep the calories and salt down. This recipe was passed down from a cousin to my mother and is very easy and delicious. Keep a can of Corned Beef on your pantry shelf for a quick dinner. This one is good enough for company.



450g (1lb) Lean Minced Beef (Hamburger)
75g (3oz) Breadcrumbs, fresh or dried
5 tbsp Tomato Ketchup
1 Egg
1 tbsp Oil
1 tsp Freshly Ground Black Pepper
1 tsp Dried Mixed Herbs
1 Clove Garlic, crushed


Place all of the ingredients except the oil into a bowl and mix thoroughly.
Shape into balls.
Heat the oil in a heavy based frying pan on high heat.
Fry the rissoles until golden brown, turning as required.
Reduce the heat and allow to cook through.

Serve with Chips "French Fries". Very quick supper !
