Homemade candy makes a special gift as well as a yummy treat. This section includes candy made on the stove and in the microwave.

Microwave Pecan Brittle

Ingredients:pecanbrittle

1 Cup Pecan’s or Raw Peanuts
1 Cup White Sugar
½ Cup White Corn Syrup 1/8 Teaspoon Salt (Only if using peanuts)
1 Tablespoon Butter or Margarine
1 Teaspoon Baking Soda
1 Teaspoon Vanilla

Directions:

Grease the bottom of a cookie sheet with butter or margarine

We use a large 6 cup glass measuring cup, with a handle, to cook the brittle in.

Add nuts, sugar, corn syrup and salt, to large measuring cup and stir. Cook 4 minutes on high then stir and cook an additional 1½ minutes on high.
Add butter, stir and cook 1 minute 40 seconds on high
Add baking soda and vanilla. Stir, very quickly, until foaming.
Pour onto a buttered cookie sheet
Cool completely, crack and store in an airtight container.

Notes:

All microwaves cook at different rates so you may need to experiment with the times, for your microwave, to reach the hard crack stage for pecan brittle.

Dark Chocolate Truffles

Ingredients:

8 Ounces Semisweet Chocolate, chopped
4 Ounces Unsweetened Chocolate, chopped
2/3 Cup Heavy Cream
2 Tablespoons Unsweetened Cocoa
2 Tablespoons Powdered Sugar
Chocolate Sprinkles
Shaved Milk Chocolate

Directions:

Place the two chocolates into a 4 quart bowl. Heat the cream in a saucepan just until boiling. Pour the boiling cream over the chocolate. Allow chocolate and cream to stand for 5 minutes and then stir until smooth. Refrigerate the ganache for 1 hour or until firm, not hard.

Place tablespoons of the ganache, for each truffle, onto a parchment lined baking sheet. Evenly space the 24 portions on the baking sheet and refrigerate for 15 minutes. When chilled roll the ganache between your palms to form smooth balls. Roll the balls in the desired coating such as cocoa, powdered sugar, sprinkles or shaved chocolate. Store the truffles in a tightly sealed plastic container in the refrigerator.
Remove 1 hour before serving.
