Easy Sugar Cookies

Ingredients: sugarcookies

1 Cup Butter or Margarine
1 Cup Vegetable Oil
1 Cup Sugar
1 Cup Powdered Sugar
1 Teaspoon Vanilla
2 Eggs
1 Teaspoon Baking Soda
1 Teaspoon Cream of Tartar
1 Teaspoon Salt
4 ½ Cups All Purpose Flour
Extra Sugar for rolling the cookies.


Preheat oven to 375°

In a large mixing bowl, cream butter, sugar and powdered sugar. Add the vegetable oil, vanilla, eggs, baking soda, cream of tartar and salt and mix well. Next add the flour and mix until a soft dough forms. Chill dough, in the refrigerator, for a 1/2 hour.

With your hands gently roll a teaspoon of cookie dough into a ball. Roll the ball in sugar and place on a lightly greased baking sheet. Continue to roll the dough into balls and fill the pan with a dozen cookies. Dip a glass tumbler into the sugar and gently press a cookie. Make sure to dip the tumbler into the sugar before pressing the next cookie. Return the unused dough to the refrigerator between baking batches. Bake approximately 10 minutes. Remove from baking sheet and cool. This recipe makes approximately 7 1/2 dozen.
