Oatmeal Scotchies

oatmealscotchies Ingredients:

Preheat oven to 375°

1 Cup Butter, Margarine or Butter Flavored Crisco
¾ Cup White Sugar
¾ Cup Brown Sugar, Packed
2 Eggs
1 Teaspoon Baking Soda
1 Teaspoon Vanilla or grated peel of 1 orange
½ Teaspoon Salt
½ Teaspoon Cinnamon
1 ¼ Cup All Purpose Flour
3 Cups Quick  or Old Fashioned Oats
1 - 11oz. Bag of Butterscotch Chips


In a large bowl cream Butter Flavored Crisco, white sugar and brown sugar with an electric mixer. Add eggs, baking soda, vanilla, salt and cinnamon and mix until well combined. Add flour and mix. Add oats and mix until well combined. Stir in butterscotch chips. Drop by rounded teaspoonfuls, 2 in. apart on ungreased baking sheets. Bake until a light golden brown approximately 7 to 8 minutes for chewy cookies or 9 to 10 minutes for crisp cookies. Cool on baking sheets for 2 minutes before removing. Remove to parchment paper or a wire rack. When completely cooled, store in an airtight container.


I use Butter Flavored Crisco in this recipe so that the cookies hold their shape when baked.
