Cookies are great for snacks, gifts, bake sales and holidays. This section covers drop, cut out, refrigerated, shaped and bars. It's a tradition in our house to have warm cookies pass inspection by the cookie testers.

Oatmeal Scotchies

oatmealscotchies Ingredients:

Preheat oven to 375°

1 Cup Butter, Margarine or Butter Flavored Crisco
¾ Cup White Sugar
¾ Cup Brown Sugar, Packed
2 Eggs
1 Teaspoon Baking Soda
1 Teaspoon Vanilla or grated peel of 1 orange
½ Teaspoon Salt
½ Teaspoon Cinnamon
1 ¼ Cup All Purpose Flour
3 Cups Quick  or Old Fashioned Oats
1 - 11oz. Bag of Butterscotch Chips

Directions:

In a large bowl cream Butter Flavored Crisco, white sugar and brown sugar with an electric mixer. Add eggs, baking soda, vanilla, salt and cinnamon and mix until well combined. Add flour and mix. Add oats and mix until well combined. Stir in butterscotch chips. Drop by rounded teaspoonfuls, 2 in. apart on ungreased baking sheets. Bake until a light golden brown approximately 7 to 8 minutes for chewy cookies or 9 to 10 minutes for crisp cookies. Cool on baking sheets for 2 minutes before removing. Remove to parchment paper or a wire rack. When completely cooled, store in an airtight container.

Notes:

I use Butter Flavored Crisco in this recipe so that the cookies hold their shape when baked.

Spritz

Ingredients:

1 Cup butter or margarine, softened
½ Cup white sugar
2 ¼ Cups All Purpose flour
½ Teaspoon salt
1 egg
1 Teaspoon almond or vanilla extract
Colored sugars, sprinkles and candies

Directions:

An electric or hand cookie press is needed to form these cookies.
Heat oven to 400 degrees.

With an electric mixer, cream butter and sugar. Blend in remaining ingredients. Fill cookie press with ¼ of the cookie dough then form desired shapes on an ungreased baking sheet. Sprinkle cookies with colored sugars and sprinkles to decorate. Bake for 6 to 9 minutes until set but not brown. Remove to rack and cool completely before storing in an airtight container.

Easy Sugar Cookies

Ingredients: sugarcookies

1 Cup Butter or Margarine
1 Cup Vegetable Oil
1 Cup Sugar
1 Cup Powdered Sugar
1 Teaspoon Vanilla
2 Eggs
1 Teaspoon Baking Soda
1 Teaspoon Cream of Tartar
1 Teaspoon Salt
4 ½ Cups All Purpose Flour
Extra Sugar for rolling the cookies.

Directions:


Preheat oven to 375°

In a large mixing bowl, cream butter, sugar and powdered sugar. Add the vegetable oil, vanilla, eggs, baking soda, cream of tartar and salt and mix well. Next add the flour and mix until a soft dough forms. Chill dough, in the refrigerator, for a 1/2 hour.

Molasses Cookies

Ingredients: molassas_cookies

¾ Cup Shortening, melted and slightly cooled
¼ Cup Molasses
1 Cup White Sugar
1 Egg
2 Teaspoons Baking Soda
½ Teaspoon Cloves
½ Teaspoon Ginger
1 Teaspoon Cinnamon
½ Teaspoon Salt
2 Cups Sifted All-Purpose Flour
White Sugar for rolling cookies in.

Directions:

Preheat oven to 375°

Combine shortening, molasses and sugar. Add egg and mix until blended. Next add baking soda, cloves, ginger, cinnamon and salt and mix. Add flour and mix well.

Roll teaspoons of cookie dough between your hands to form balls. Next roll the balls in white sugar and place on an ungreased cookie sheet. Bake until top of cookies are cracked and dry. Remove from pan and cool on rack or parchment paper.

Notes:

I tend to undercook these a bit so they are soft and chewy.

Grandma's Ice Box Cookies

Ingredients:

¾ Cup Butter or Shortening
1 Cup Brown Sugar
1 Cup White Sugar
2 Eggs
Pinch of Salt
½ Egg Shell of Water
1 Teaspoon Baking Soda
½ Teaspoon Baking Powder
3 ¼ Cups All Purpose Flour
1 Cup Chopped Nuts, I use Pecans

Directions:


Cream the butter and sugars together in a large bowl with an electric mixer. Add the eggs and mix until blended. Add the salt, water, baking soda and baking powder and mix. Add the flour and mix until dough forms. Stir in the nuts. Form the dough into 2-3 rolls, wrap in plastic wrap and refrigerate over night or longer. Slice very thin and bake at 350°.
